This hands-on experience covers the most fundamental of the Weald's ancient fermentations, including: apple pressing and cidermaking, mead blending and fermentation, fermented pickles, vinegar making and woodland drinks. All accompanied by a woodland lunch.

About the event

This day draws on the bounty of our ancient woodland as well as the surrounding countryside.


Activities start by a gathering of apples from our Malus Sylvestris trees. These are Britain's original apple, from which its inhabitants made cider for 2800 years before the Roman's brought their fancy new varieties. After gathering, we press them separately to our other woodland apples, so we can experience a taste of the past, both as juice and cider fermented by Francis in 2022. After the pressing, comes the blending and bottling, to allow everyone to go home with a little fermenting memento of the day.


Between gathering, crushing, pressing, fermenting and bottling our juice, come other exciting activities within the world of wild microbes. We'll visit our wild honeybees, residents of an old oak, and there blend up some local honeys for fermenting into mead. We'll also taste a few.
