Explore ancient and modern cheesemaking techniques in a woodland setting, using natural ingredients and simple equipment. Your team will make fresh cheese, shape curds for hard cheese, craft woodland mozzarella, and bake sourdough and flatbreads in clay ovens — a hands‑on, collaborative food‑craft experience.

About the event

Wild Cheesemaking & Breadmaking offers a rich, sensory team experience rooted in traditional food‑craft. Drawing on Pam and Francis Gimblett’s 25 years of hosting interactive, high‑engagement events, the day blends practical learning, shared creativity and woodland atmosphere to create a memorable corporate programme.

Using milk from a local herd of small‑breed cows, participants explore a range of ancient cheesemaking methods that can be easily recreated at home. The session includes making fresh lactic‑set cheese, cutting and moulding curds for hard cheese, and crafting Pam and Francis’ woodland mozzarella — enjoyed on site as part of the experience.

To accompany the cheeses, teams prepare Wild Weald flatbreads and sourdough enriched with foraged seeds, baked in clay ovens. The process is tactile, collaborative and deeply satisfying, often sparking the desire to build a clay oven at home. Throughout the day, participants enjoy tastings of woodland cordials and shrubs and take part in additional seasonal woodland activities as time allows.

The event format draws on Pam and Francis’ background in cheesemaking for hotels, delis and restaurants, combined with their long experience designing fun, informative and humorous interactive sessions. Delivered as a half‑day or full‑day programme, Wild Cheesemaking & Breadmaking offers teams a grounded, creative environment where shared making leads naturally to stronger connection, clearer thinking and a welcome shift from the pace of corporate life.
